When the opportunity to start a restaurant knocked, Launceston’s Josh Brown answered.
The 24-year-old chef opened new restaurant Apricus at the old site of Stonesthrow at Norwood, which shut its doors earlier this year.

Brown said starting a business for the first time made for a few stressful weeks, but it was worth it.
“I’ve always wanted to have my own business and then I became a chef so it was a pretty natural progression,” he said.
“This came up and it seemed like the perfect opportunity and so far it has been.”

The restaurant’s namesake, Apricus means to be filled with sunshine, Brown said.
“Even when it’s raining it’s still super bright, light and welcoming,” he said.
“I want to continue to build on the family-friendly feel that Stonesthrow started, but it is a fresh start with complete independence and separation from the former operators.”
Apricus sources ingredients and drinks from local producers.
“I designed the menu with Tasmanian producers in mind,” Brown said.
“Especially during this difficult time … I believe now is more important than ever to keep Tasmanian money within our home state.”
Apricus’ opening also resulted in the return of much-loved alpacas, cows, sheep and goats to the property.
“The farm animals are back, with some new additions set to join us. I’m most excited for the baby goats and a baby fluffy calf coming soon,” Brown said.
While opening amid a global pandemic has presented Brown with a few challenges, he said local support for his business had been amazing.
“We’re really lucky to have an established customer base already, even though we set up the business from scratch people knew where we were … we’re really thankful for that,” Brown said.
“We want to thank everyone for their support and encouragement as we continue to grow and improve as a small business.”
